Lemon Balm is a member of the mint family with a wonderful lemony scent.
As a tea lemon balm has been used for anxiety, depression and longevity. It is still used for headaches and fatigue. It is very good and easy to make. Add one tablespoon of fresh lemon balm leaves or two dried to a cup of boiling water.
Lemon Balm leaves can be applied to bites and stings for a soothing effect.
In the kitchen lemon balm has many uses from salads and herb butters to casseroles and meat dishes.
Lemon Balm prefers a moist shady area to grow. It is a hardy perennial that is a beautiful addition to the herb garden.

Thyme has been used since ancient times and has long been an emblem of courage and bravery. Egyptians used thyme for embalming. Greeks used it as incense and in their baths.

Thyme is known for being a very good antiseptic and is still used in Listerine mouthwash.Thyme is also used for coughs and was known as a cure for whooping cough.

In the kitchen thyme has many uses. It is good in soups and stews. It tastes wonderful with fish, lamb and other meats. My favorite use is in herb butters and salad dressing.

Thyme is a hardy perennial that loves to grow near lavender. It is a beautiful addition to any herb garden.

This lovely herb painting "Thyme" would make a great addition to your kitchen decor. It may provide just the inspiration and courage you need for your cooking.
